Recipe | Peanut Butter 'Nice Cream' Frozen Yoghurt

Ice cream anyone!? If you're a peanut butter fan, this recipe is for you! I'll keep this intro short because personally, I don't enjoy scrolling through paragraphs of text to eventually find the recipe I was looking for! Like many of us, I have a sweet tooth but I keep reading online that refined sugar can cause inflammation in the body; so if you still want to enjoy ice cream this summer you might want to give this healthier option a go. This no churn peanut butter frozen yoghurt is super simple to make and rather delicious - plus, no fancy ice cream maker required!


INGREDIENTS
2 large ripe bananas, sliced and frozen (freeze for about 2 hours)
2 heaped tablespoons full fat plain greek yogurt
2 heaped tablespoons creamy peanut butter
Honey, to taste
*I doubled the quantities to fill my container.
METHOD
1) Add the frozen bananas to your food processor or heavy duty blender. I used my Magimix. Blend together for a couple minutes until it’s smooth. You may need to scrape down the sides and stir to help it along.
2) Next add the yoghurt, honey and peanut butter, blend for a minute or so until combined. This frozen yogurt is now ready to eat and has a soft serve consistency. I recommend you taste the mixture to see if more honey is required.
3) For a true ice cream consistency, freeze for about an hour in a container (I used a bread tin).
4) Optional - You can drizzle or swirl in extra peanut butter and top with chopped peanuts.
